Rich Pork Curry
Ingredients
750g pork leg or shoulder
1 tablespoon oil
5 curry leaves
1 large onion, finely chooped
3 teaspoons finely chopped garlic
1 teaspoon grated ginger
1/2 teaspoon chilli powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon fennel seeds
1 teaspoon cumin
3 teaspoons ground coriander
2 tablespoons lemon juice, malt vinegar or tamarind liquid
1/2 cup hot water
1/2 cup coconut milk
Method
1. Trim the rind from the pork, if any, and cut into 3cm cubes.
2. Heat the oil in a pan, add the curry leaves, onion and garlic and cook until the onion is soft. Add ginger, chilli, salt and spices and cook for a few more minutes.
3. Add the pork and mix with the spice mixture, add the lemon juice and cook for 45 minutes, stirring occasionally, or until the moisture has evaporated.
4. Cook for a further 5 minutes stirring, the colour will darken. Add the water and coconut milk and simmer for 10 minutes.

Szechuan Style Pork
Ingredients
500g pork
200g noodles
2 tbsp garlic, crushed
2 tsp ginger, chopped
vegetables (I used just corn, but you can use anything)
2 tbsp rice wine
1 tbsp soy sauce
150ml chicken stock
2 tsp cornflour
oil
Method
1. Cut the pork into slices 1cm x 5cm.
2. Add 1tbsp rice wine, soy sauce and cornflour and mix. Add the pork to the mix and marinate for 15 minutes.
3. Cook the noodles according to the instructions.
4. Heat the oil in a wok and stir fry the pork until they are brown. Add the ginger, garlic and vegetables, soy sauce, rice wine and stock and continue to stir fry for a further 5 minutes. If the mixture has not thickened add a little more cornflour/water mixture.
5. Remove from the wok and serve on top of the noodles immediately.
Result

Szechuan Double Cooked Pork
Ingredients
500g pork
1 green bell pepper
1 tsp lemon grass
150g snow peas
oil
1 tsp salt
1/2 tbsp brown sugar
2 tsp light chilli sauce
1 tbsp black bean sauce
1 tbsp rice wine
1 tsp szechuan peppers, crushed
150g bean sprouts
Method
1. Boil the pork in water for 25 minutes.
2. Remove pork from the water and allow to cool and cut into slices.
3. Cut the bell pepper into slices.
4. Heat some oil in a wok and add the bell pepper, bean sprouts and snow peas. Stir fry for one minute.
5. Next add the pork, along with the remaining ingredients and stir fry for a further 1 minute.
6. Serve immediately with rice or noodles.
Result
Deliciously tender pork, due to the double cooking technique. The bean sauce and chilli sauce also add an invigorating kick!

Spiced Pork
Ingredients
1.5kg lean pork chops
1/2 teaspoon five spice powder
1 1/2 tablespoons sweet sherry
1 1/2 tablespoons cornflour or arrow root
salt
pepper
4 tablespoons soy sauce
1 teaspoon chopped ginger
1/4 cup water
1 chicken stock cube
oil
Method
1. Remove any fat and bones from the chops.
2. Mix remaining ingredients in a bowl except for the chicken stock cube, water and 2 tablespoons of soy sauce.
3. Cut the chops into slices small enough for one mouthfull and add to the mixture. Leave for 120 minutes, stirring occasionally.
4. Add oil to the wok, enough so that there is about 2.5cm in depth of oil, heat until smoking, add chops cooking until golden brown. Remove and keep warm.
5. Add the remaining ingredients to a pan and bring to a boil, pour over pork.
Result
Very nice, I loved the dark soy taste, but I am biased! I love soy sauce!

Sweet & Sour Pork
Ingredients
1.25kg lean pork chops
2 teaspoons of sugar
3 tablespoons of soy sauce
1 tablespoon of dry sherry
1 egg yolk
cornflour
oil
1 large onion
spring onions
1 red pepper
125g mushrooms
1 medium cucumber
500g can pineapple pieces
2 tablespoons tomato sauce
1/4 cup of white vinegar
water
1 chicken stock cube
Method
1. Combine sugar, 1 1/2 tablespoons soy sauce, sherry and egg yold and stir well.
2. Cut pork into 2cm cubes and place into soy sauce mixture, and leave for one hour.
3. Drain the meat from the marinade and keep the remaining liquid.
4. Toss the meat in cornflour and cook meat in hot oil until golden brown.
5. Slice onion, spring onion, pepper, mushrooms and cucumber.
6. Heat three tablespoons on oil in a large pan and fry for three minutes.
7. Add pineapple and pineapple juice to pan with the remaining marinade, soy sauce, vinegar, tomato sauce and stock cube.
8. Mix 1 1/2 tablespoons of cornflour with 1 cup of water and add to the mixture, boil until it thickens.
9. Add pork and stir until mixed.
Result
Not bad actually, just make sure that you have white vinegar. I didn’t and used red wine vinegar instead and it came out quite bitter.
